It was in 1960, that the first mussel beds were created in the Bay of La Fresnaye, in a sheltered environment suitable for breeding. The pioneers, from the French region of Charente, thanks to their techniques and their knowledge of the breeding of mussels, were able to develop the activity in the bay.
Oyster farming was only developed in 1972 with nowadays a current production of around 500 tonnes for an area of 21 hectares.
The Fréhel oyster with its resistant shell (which ensures a good preservation) distinguishes itself by its plentiful flesh with a very iodized taste.
The producers, who are very attached to the quality of their products, use all their know-how to satisfy their customers.
An oyster requires 3 years of work before reaching our plates!
Most of the oysters are consumed locally. They are sold on markets, in fishmonger’s shops, restaurants and supermarkets. What is not consumed locally is dispatched to the four corners of France within 24 hours and some are even exported abroad.
